Zucchini Bread
Zucchini Bread is an moderately easy dinner. Made with 3 eggs, beaten, 2 c. sugar, 3 tsp. cinnamon, 1 tsp. salt and 1 c. oil or 1 stick margarine and 1/2 c. shortening, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Add sugar, cinnamon and salt to beaten eggs and mix well.
Add oil.
Combine baking soda, baking powder and flour and add to mixture.
Fold in zucchini, nuts and vanilla.
Divide batter into 2 (9-inch) loaf pans.
Bake at 350Β° for 1 hour.
Will freeze indefinitely.
