Zucchini Boats
Zucchini Boats is an moderately easy dinner. Made with 2 large zucchini, 1 lb. bulk sausage, 1 c. saltine crumbs, 1 egg, beaten and 1/4 tsp. thyme, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Parboil zucchini until just fork tender.
Meanwhile, brown sausage and onion.
Drain off fat.
Cut zucchini lengthwise. Scoop out and discard seeds.
Scoop out pulp, almost to rind.
Add pulp to sausage, along with cracker crumbs, thyme, eggs and Mozzarella.
