Zesty Lemon Curd is an easy dinner. Made with 3 eggs, beaten, 2 c. sugar, 1/2 lb. butter, cut in 1 tbsp. size pieces, 3/4 c. fresh lemon juice and grated peel of 1 lemon, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

In top of a double boiler, combine all ingredients; cook and stir over boiling water until thick like pudding.
Chill until ready to serve.
Spread on muffins, rolls, waffles or ice cream. Keeps well in refrigerator up to 2 weeks.
