Yellow Squash Casserole
Yellow Squash Casserole is an moderately easy dinner. Made with 2 lb. yellow squash, sliced (6 c.; do not peel), 1/2 c. chopped onion, 1 can condensed cream of chicken soup, 1 c. dairy sour cream (8 oz.) and 1 c. shredded carrots, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Slice squash and chop onion; boil 10 minutes.
Drain.
Mix soups, sour cream and carrots.
Fold in squash and onion.
Add half of stuffing mix and 1/4 cup of melted oleo.
Sprinkle rest of stuffing mix on top and pour other 1/4 cup melted oleo over top. Use a 9 x 13-inch pan.
Bake at 350Β° for 25 to 30 minutes.
