Cut chicken into 1-inch size cubes.
Boil shoyu, Mirin, sugar and chicken bones in a saucepan. Simmer, uncovered, until mixture is reduced by 1/4. Cool.
Dip chicken in sauce. Thread skewer with chicken, mushrooms and green onions. Dip in sauce; grill on barbecue.
