Beat the whites of 7 eggs until foamy.

Add cream of tartar and continue beating until mixture is very stiff.

Gradually add 1 cup sugar still beating.

Beat the egg yolks until thick and add lemon flavoring.

Then fold them into the egg whites very gently.

Add 1 cup of cake flour; sift before measuring.

Flavor with orange extract, almond extract and vanilla.

Bake in square or oblong pan from 30 to 40 minutes.

When cake has risen, the heat may be reduced slightly.

When cool, cake may be cut into squares; cover each square with a butter icing.
