Wrapped Catfish
Wrapped Catfish is an moderately easy dinner. Made with 8 dried corn husks, 4 tbsp. olive oil, handful small white onions, quartered, 4 chiles (serranos), finely chopped and 10 tomatilloes, husks removed and chopped, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Soak corn husks in water for 1 hour.
Rinse, drain and put aside.
Heat olive oil in skillet, then add onions and saute 2 minutes.
Add the chiles and tomatillos and cook for 3 minutes, stirring constantly.
Add salt and set aside to cool.
