Wonderful Vegetables is an moderately easy dinner. Made with small red potatoes, 8 oz. carrots, cut up, 8 oz. yellow squash, cut up, 2 c. fresh or frozen vegetables and scallions, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook potatoes in pan of water 13 minutes.
Add carrots.
Cook 5 minutes.
Add yellow squash.
Cook 2 minutes.
Add peas.
Cook 2 minutes.
Drain and put in dish.
Add melted butter or margarine. Sprinkle with scallions and parsley, cut up.
Serves 8.
Looks beautiful when served.
