Wilted Spinach Salad
Wilted Spinach Salad is an moderately easy dinner. Made with 1/2 lb. spinach, 4 slices bacon, 1 small white onion, finely minced, 2 tsp. salt and 1 tsp. pepper, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cut stems off spinach; wash leaves well.
Drain in colander. Chop spinach.
Cook bacon until browned and crisp; remove.
Drain on paper towels and crumble.
Add bacon, minced onion, salt and pepper to spinach.
Add vinegar to bacon fat; bring to a boil. Stir and pour over the spinach.
Serve immediately while spinach is still crisp. Yield: 4 servings.
