Wild Rice Soup
Wild Rice Soup is an moderately easy dinner. Made with 1 medium onion, thinly sliced, 4 oz. fresh mushrooms, sliced or chopped, 3 tbsp. butter, 1/4 c. flour and 4 c. chicken stock, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Cut sliced onion into quarters.
Cook onion and mushrooms in butter until onion is transparent.
Add flour and cook for 15 minutes, stirring occasionally.
Add chicken stock and cook for approximately 10 minutes, stirring until smooth.
Add wild rice, cream and sherry, stirring until heated throughout.
Garnish with parsley. Makes 6 to 8 servings.
