Wiener Schnitzel
Wiener Schnitzel is a breaded veal cutlet seasoned with lemon juice, salt, pepper, and grated cheese, then fried in butter and finished with Gruyere. This version is crisp, rich, and best served immediately with a bright salad.
Sprinkle the veal cutlets with lemon juice, salt, pepper, and grated cheese, then let them stand for 5 minutes.
Dredge each cutlet in flour, dip in beaten egg, and coat with bread crumbs.
Fry one side in hot butter until golden.
Turn the cutlets, reduce the heat, and place a slice of Gruyere on each one.
Cook slowly until the second side is crisp and the cheese softens, then serve with a crisp salad.
