White Fruit Cake
White Fruit Cake is an moderately easy dinner. Made with 1 3/4 c. flour, 1 c. sugar, 1/2 tsp. salt, 1/2 tsp. baking powder and 1 1/2 c. butter or margarine, softened, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Grease and flour 10-inch tube pan.
Combine flour, sugar, salt, baking powder, butter, lemon extract and eggs.
Blend.
Beat 2 minutes on low speed.
Stir in by hand pineapple, cherries and pecans.
Pour into pan.
Place in a cold oven.
Turn on oven to 250Β°.
Bake 1 1/2 to 2 hours.
Will keep well for up to 6 months if wrapped real good and kept in refrigerator.
