Waikiki Meatballs
Waikiki Meatballs is an impressive dinner. Made with 1 1/2 lb. ground beef, 2/3 c. cracker crumbs, 1/3 c. minced onion, 1 egg and 1 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Mix thoroughly beef, crumbs, onion, egg, salt, ginger and milk. Shape mixture by tablespoon into balls.
Melt shortening in large skillet; brown and cook meatballs.
Remove meatballs.
Pour fat from skillet.
Mix cornstarch and sugar.
Stir in reserved pineapple syrup, vinegar and soy sauce until smooth.
Pour in skillet; cook over medium heat, stirring constantly, until mixture boils and thickens.
Boil 1 minute.
Add meatballs and pineapple tidbits; heat thoroughly.
Serve over bed of rice.
