Vinegar Pie
Vinegar Pie is an moderately easy dinner. Made with 1 c. sugar, 2 tbsp. flour, 2 tbsp. cider vinegar, 2 eggs, beaten and 1 tbsp. butter, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Bake pie shell; cool.
Mix sugar and flour in 2-quart saucepan. Add enough water to vinegar to measure 1 cup.
Blend into eggs. Stir egg mixture gradually into sugar mixture.
Cook over medium heat, stirring constantly until mixture thickens and boils.
Boil and stir 1 minute.
Remove from heat; stir in butter and lemon extract.
Cool slightly.
Pour into pie shell; refrigerate.
Serve with whipped cream.
