Velvet Cheese Soup
Velvet Cheese Soup is an impressive dinner. Made with 1/4 c. butter or margarine, 1/4 c. chopped green onion, 1 c. minced celery, 1 c. minced carrots and 1/4 c. minced bell pepper, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
In a soup pot, combine the butter, onions, celery, carrots, and bell pepper.
Saute until vegetables are tender but not browned.
In a large saucepan, heat the broth, half and half, and milk.
Add the flour to the vegetables.
Mix well.
Add the boiling water and the milk mixture.
Stir well. Add the cheese in small pieces.
Reduce heat to low and stir until cheese melts. Taste and adjust seasoning, if needed.
Makes 1/2 gal.
