Veggie Chili
Veggie Chili is an impressive dinner. Made with 2 tsp. canola oil, 1 medium onion, chopped, 1/2 green pepper, chopped, 2 c. chopped zucchini and 1 can chili beans, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
π¨βπ³ Instructions
Saute onion, green pepper and zucchini in oil in medium stock pan until tender. Add beans, tomatoes and tomato sauce.
Mix well. Add spices.
Mix well again.
Add water.
Bring mixture to a boil. Reduce heat and simmer for 35 to 40 minutes.
Serve topped with low-fat sharp Cheddar cheese.
Makes about 8 to 10 (1 cup) servings.
