Veggie Burger
Veggie Burger is an moderately easy dinner. Made with 1 medium red bell pepper, 1 medium green bell pepper, 1 onion, 1/2 to 1 small garlic clove and 1 large carrot, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Ground bell pepper, onion, garlic, carrot and mushrooms.
(May chop fine in food processor for best results).
Cook 1 cup of couscous as directed on box of pasta.
Add to ground ingredients, then add 1 scrambled egg.
Mix well.
Roll out to patties.
Bake or fry as desired.
Serve on hamburger buns (cheese optional).
May use rice instead of couscous.
