Vegetarian Lentil Soup is an moderately easy dinner. Made with 1 c. lentils, rinsed, 2 1/2 qt. water, 1 c. barley, 1/4 c. oil and 1 large onion, chopped, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Place all ingredients in a large pot.
Bring to a boil. Reduce heat, cover and simmer 1 hour or until lentils and barley are tender, stirring occasionally.
Add more water, if too thick. Makes about 4 quarts.
Can be frozen.
