Chop carrots, potatoes and onion; set aside.
Brown meat; drain.
Add chopped vegetables to meat; let steam 10 to 12 minutes.
Add Ro-Tel tomatoes, sauce and water.
Add salt and pepper.

Serve with hot corn bread.
