Vegetable Sandwich is an impressive dinner. Made with 2 c. celery, 3 cucumbers, 2 carrots, 1 small onion and 1 green pepper, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Finely chop vegetables in blender or food processor.
Dissolve gelatin in a little of the juice from the draining vegetables. Add to boiling water.
Mix next 5 ingredients with drained vegetables.
Let set overnight.
Use with any type bread.
(I buy unsliced and cut diagonally with crust removed, then into party size sandwiches.)
