Vegetable Rice
Vegetable Rice is an moderately easy dinner. Made with 1/4 c. chopped onion, 3 tbsp. butter, 1 1/2 c. sliced mushrooms, 2 c. chopped broccoli and 1 c. chopped tomato, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Saute onion in butter in skillet until golden brown.
Add mushrooms, broccoli and tomato.
Cook for 4 minutes, stirring frequently.
Add water and bouillon cubes.
Bring to a boil.
Stir in rice, salt and oregano.
Cook, covered, over low heat for 20 minutes or until water is absorbed.
Mix in cheese.
Serve hot or cold.
