Vegetable Quick Bread
Vegetable Quick Bread is an impressive dinner. Made with 2 c. all-purpose flour, 1 c. whole wheat flour, 1 c. sugar, 1 tbsp. baking powder and 1 1/2 tsp. ground cinnamon, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Preheat oven to 350°.
Combine flours, sugar, baking powder, cinnamon, salt, baking soda and ginger in large bowl.
Cut shortening into dry ingredients with pastry blender until mixture resembles coarse crumbs.
Stir in carrots, nuts and dates.
Beat eggs and milk together with fork; add to bowl and stir only until dry ingredients are moistened.
Batter will be stiff.
Pour batter into 2 well-greased loaf pans.
Bake at 350° for 1 hour or until done.
Cool for 10 minutes in pan.
Remove from pan and cool on rack before slicing.
