Vegetable Quiche is an moderately easy dinner. Made with 1 1/2 c. chopped zucchini, 2 c. sliced mushrooms, 1/2 c. chopped onion, 2 tbsp. butter and 4 eggs, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Heat oven to 350Β°.
Cook and stir zucchini, mushrooms and onions in butter over medium heat until tender.
Place remaining ingredients in blender.
Blend until smooth.
Stir into vegetable mixture.
Pour into greased 9-inch quiche dish or pie pan.
Bake 30 minutes.
Let stand 10 minutes before serving.
Cut wedges; serve warm.
Serves 6. No crust needed.
