Vegetable Lasagna
Vegetable Lasagna is an moderately easy dinner. Made with 3 c. sliced zucchini, 2 c. sliced mushrooms (8 oz.), 1 c. chopped onions, 3 cloves garlic, chopped and 1 tbsp. oil, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Cook vegetables and garlic until tender.
Stir in pasta sauce and oregano; simmer 15 minutes.
Combine cottage cheese and Parmesan in a bowl.
In a 13 x 9-inch dish, layer 1/2 each of the noodles, sauce, cottage cheese and Parmesan mixture, plus 1/2 of Mozzarella.
Repeat layering and cover and bake for 45 minutes at 350Β°.
Uncover for 15 minutes more.
Let stand 15 minutes.
