Vegetable Lasagna
Vegetable Lasagna is an impressive dinner. Made with 1 (10 oz.) box frozen spinach, 1 c. grated carrot, 1 medium onion, chopped, 1/2 c. sliced black olives and 1 c. sliced mushrooms, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Combine vegetables and garlic with tomato sauce.
Combine eggs, cottage cheese, spices and grated Mozzarella cheese.
Wet lasagna noodles with hot water and layer in a 9 x 13-inch pan.
Layer veggie sauce and cottage cheese mixture over noodles until the mixtures are gone.
Sprinkle with Parmesan cheese.
Cover and cook 45 minutes at 375Β°.
Uncover and cook 15 minutes longer.
