Vegetable Casserole
Vegetable Casserole is an moderately easy dinner. Made with 2 cans veg-all vegetables, 1 c. mayonnaise, 1 c. provolone cheese, grated, 1 tbsp. poppy seed and 1 c. chopped onion, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Drain the vegetables and place in large mixing bowl.
Add chopped onion and chopped celery; stir to mix well.
Mix mayonnaise, sour cream and Provolone cheese.
Combine with vegetables.
Pour into buttered casserole dish and top with the crushed crackers.
Drizzle 2 tablespoons melted butter over crackers and sprinkle with poppy seed.
Bake in 350Β° oven about 20 minutes or until it begins to bubble.
Serve immediately.
