Union Pacific Griddle Cakes
Union Pacific Griddle Cakes is an moderately easy dinner. Made with 2 eggs, 1 level tsp. salt, 2 level tsp. sugar or 3 tbsp. syrup, 2 c. milk or buttermilk and 2 c. flour, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Break eggs into mixing bowl and beat well.
When well beaten, add the sugar or syrup and salt.
Mix thoroughly.
Stir in the milk and baking powder (which has been sifted into flour) and flour mixture.
Beat until smooth and then stir in butter last.
Do not beat after adding butter.
Batter should flow well when poured on griddle.
Cook on medium hot griddle.
Makes 1 quart of batter.
