Unbelievable Cookies is an easy dinner. Made with 1 c. sugar, 1 c. creamy peanut butter, 1 egg and 1 tsp. vanilla flavoring, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Combine sugar and peanut butter in a large bowl.
Beat with electric mixer on medium speed until light and fluffy.
Add egg and beat well.
Stir in vanilla.
Dough will be dry.
Pinch off small pieces of dough and roll in hand 1-inch balls.
Place balls on cookie sheet 1 inch apart.
Slightly mash each ball with a fork (crisscross).
Bake at 350Β° for about 10 minutes.
