Two Way Minestrone
Two Way Minestrone is an moderately easy dinner. Made with 12 oz. fish fillets, skinless, boneless chicken breast halves, turkey breast or tenderloin steaks, 2 (14 1/2 oz.) cans chicken broth, 1 (15 oz.) can garbanzo beans, rinsed and drained, 1 c. loose pack frozen mixed vegetables and 1 medium chopped onion, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Cut fish or poultry into 1-inch pieces.
In a large saucepan, stir in broth, beans, vegetables, onion, pasta and spices.
Bring to a boil; reduce heat.
Simmer, covered for 10 minutes.
Stir in undrained tomatoes.
Add fish or poultry.
Return to boiling, reduce heat.
Simmer covered.
For fish, allow 2 to 3 minutes.
For poultry, allow 4 to 5 minutes.
Serve with garlic bread.
Makes 4 servings.
