Twiced Baked Potatoes
Twiced Baked Potatoes is an easy dinner. Made with 4 nice sized baking potatoes, fat-free sour cream, minced onion, 4 oz. fat-free cream cheese and salt, pepper, paprika, chervil, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Scrub the potatoes.
Bake them until they are done.
Cut the potatoes in half lengthwise.
Scoop out the potatoes, leaving a shell.
Rice the potatoes.
Beat in cream cheese and enough sour cream to lighten the mixture.
Add 1 to 2 teaspoons of minced onion if desired.
Season to taste with salt and pepper.
Refill the potato shells.
Garnish with paprika and/or chervil.
Serves 8.
