Turkey Vegetable Soup
Turkey Vegetable Soup is an impressive dinner. Made with 1/4 c. butter or margarine, 2 medium onions, chopped, 2 tbsp. all-purpose flour, 1 tsp. curry powder and 3 c. chicken broth, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Melt butter in large saucepan over medium-high heat.
Add onions and saute until translucent, about 10 minutes.
Add broth, potatoes, carrots, celery, parsley and sage and bring to a boil. Reduce heat to simmer; cover and simmer 10 minutes.
Add turkey, half and half and spinach.
Cover and continue simmering until heated through, about 7 minutes.
Season with salt and pepper.
