Tuna Loaf With Creamy Egg Sauce is an moderately easy dinner. Made with 1 (12 1/2 to 13 oz.) can tuna, drained, 3 c. soft bread cubes (about 6 slices white bread, crust removed), 3 eggs, 2 tbsp. minced onions and 1 tbsp. lemon juice, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Preheat oven to 350Β°.
Grease well an 8 1/2 x 4 1/2-inch loaf pan.
In large bowl, flake tuna.
Stir in bread crumbs, eggs, onions, lemon juice, salt, pepper, 1/2 cup sour cream and 2 tablespoons pimentos until blended.
(Reserve remaining sour cream and pimentos for sauce.) Spoon mixture evenly into loaf pan.
Bake for 45 minutes, or until knife inserted in center comes out clean. Meanwhile, prepare Egg Sauce.
