Tossed Artichoke Salad
Tossed Artichoke Salad is an moderately easy dinner. Made with 1/2 c. salad oil, 1/3 c. vinegar, 4 thin slices onion (i didn't use these), 1 tbsp. sugar and 1 clove garlic, crushed, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

In a saucepan, combine oil, vinegar, 2 tablespoons of water, onion, sugar, garlic, 1/2 teaspoon salt, celery seed and dash of pepper.
Bring to boiling.
Add artichoke hearts.
Cook until tender, 3 to 5 minutes.
Stir in pimento.
Chill.
