Tortellini Soup
Tortellini Soup is an moderately easy dinner. Made with 1 tbsp. olive oil, 4 cloves of garlic, chopped, 4-6 cans chicken broth, 1 lb. tortellini and 2 16 oz. cans chopped tomatoes, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
In a soup pot, saute garlic in the olive oil for 2 minutes. Add 4 cans of broth and tortellini.
Bring to a boil and simmer, covered, 5 minutes.
Add tomatoes and spinach, bring heat back up to simmer for 5 minutes.
The tortellini absorbs moisture so you might want to add more broth.
Sprinkle with parmesan cheese just before serving.
