Tomato Soup
Tomato Soup is an moderately easy dinner. Made with 2 tbsp. olive oil, 3 large onions, 1/2 c. chopped celery, 2 to 3 garlic cloves and 1 large can (46 oz.) low sodium light 'n tangy v-8 juice, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Saute onions in olive oil, add celery and saute until tender. Then add minced garlic and fresh basil, saute for about 2 minutes. Add V-8 juice, tomatoes and basil.
Simmer soup for at least 1/2 hour before serving.
