Tomato Coleslaw
Tomato Coleslaw is an moderately easy dinner. Made with 1 small head cabbage, 4 carrots, peeled and grated, 2 small green peppers, diced, 1 small onion, chopped (1/4 c.) and 4 large ripe tomatoes, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Trim and core cabbage; shred.
Combine in a large bowl with carrots, peppers and onion.
Dice 2 tomatoes; add to cabbage. Combine mayonnaise, vinegar, sugar, celery seed, salt and pepper in a small bowl.
Blend well.
Pour over cabbage; toss, cover and refrigerate several hours.
Slice 2 tomatoes and put on top.
