Separate eggs; beat stiff with the pinch of salt.
Beat egg yolks until thick.
Mix egg white and yolk together; add rum extract.
Beat powdered sugar into mixture and beat a lot, then dip into cups 2 tablespoons of the mixture.
Add a shot of brandy to each cup.
Mix into this boiling water.
Top with cinnamon or nutmeg and drink while hot.
