Todd's Baked Caramel Corn
Todd'S Baked Caramel Corn is an moderately easy dinner. Made with 1 c. butter or 2 sticks, 2 c. firmly packed brown sugar, 1/2 c. corn syrup (dark or light), 1 tsp. salt and 1/2 tsp. baking soda, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Melt butter and stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly; boil without stirring for 5 minutes.
Remove from heat; stir in baking soda and vanilla.
(It swells; be sure to use a big enough pan.) Gradually pour over popped corn, mixing well.
Turn into a large shallow baking pan or two smaller pans.
Bake in a 250Β° oven for 1 hour, stirring every 15 minutes.
Remove from oven.
Put out onto wax paper on the countertop to cool.
Break large pieces and store in an airtight container or plastic bags.
