Three Pepper Catsup
Three Pepper Catsup is an moderately easy dinner. Made with 2 tbsp. olive oil, 1/2 c. sliced green onion, 3 canned pickled jalapeños, minced, 1/4 tsp. dried thyme and 3/4 c. canned tomatoes, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Heat oil in skillet. Add onion, pepper, jalapeños, garlic and thyme. Cover and cook until vegetables are tender (about 10 minutes).
Mix in catsup, tomatoes and pepper.
Cover and simmer until thick (about 5 minutes). Cover and chill.
Makes about 2 3/4 cups.
Keeps 2 weeks in refrigerator.
Excellent on hamburgers and hot dogs.
