The Best Carrot Cake
The Best Carrot Cake is an moderately easy dinner. Made with 2 c. sugar, 1 1/2 c. oil, 4 eggs, 2 c. flour, sifted and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Blend sugar and oil.
Add eggs; beat at medium speed for 2 minutes.
Sift dry ingredients together.
Combine with liquids. Beat at low speed for 1 minute.
Add carrots, nuts and raisins and mix to blend.
Pour into 2 well-greased and floured 9-inch layer pans.
(I use one 9 x 13-inch pan).
Bake at 325Β° for 1 hour or until done.
Do not open oven door during baking time.
Frost with cream cheese icing when cold.
