Thai Chicken Salad
Thai Chicken Salad is an moderately easy dinner. Made with peanut sauce, 3 lb. deli roasted chicken, 1/2 c. chopped fresh italian parsley, 1 (6 oz.) pkg. wide chow mein noodles and 1/2 c. dry roasted peanuts, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Make Peanut Sauce; set aside.
Remove chicken from bones and cut into bite size pieces (about 3 cups).
Toss lettuce, chicken, parsley and onions in large bowl.
Place lettuce mixture in center of large serving plate.
Arrange noodles around edge of plate.
Sprinkle peanuts over lettuce mixture.
Drizzle sauce over salad.
Makes 6 to 8 servings.
