Texas Pecan Cake
Texas Pecan Cake is an moderately easy dinner. Made with 1 lb. margarine, softened, 1 lb. brown sugar, 4 c. plain flour, 1 lb. chopped pecans and 6 eggs, separated, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Cream butter and sugar; add well beaten egg yolks.
Sift together 3 cups of flour and baking powder and add to mixture. Beat egg whites until stiff and add.
Mix fruit and pecans with 1 cup of flour.
Mix this into the batter with a fork; pour into a tube pan and let stand in oven covered with foil.
Place pan of water on shelf under cake.
Bake at 250° for 3 hours, then 1 hour more at 300°.
Let stand 20 minutes before turning out on plate.
