Texas Grapefruit Cake
Texas Grapefruit Cake is an moderately easy dinner. Made with 2 c. cake flour, 2 tsp. baking powder, 1/2 tsp. salt, 1/2 c. freshly squeezed red grapefruit juice and 1/3 c. cooking oil, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Dry ingredients into bowl (except sugar).
Strain and combine grapefruit juice with oil.
Separate eggs and beat whites to stiff peaks.
Beat egg yolks and sugar until thick. Beat in about cup flour mix with 1/4 juice mix.
Repeat until all is used.
Gently fold in beaten whites.
Pour into two
9-inch floured cake pans.
Bake at 350Β° for 25 minutes. Frost with Cream Cheese Icing.
