Texas Caviar
Texas Caviar is an moderately easy dinner. Made with 1 lb. dried black-eyed peas, 1 large bottle zesty italian dressing, 2 c. chopped white onions, 3 bunches green onions, sliced thin (tops, too) and 1/2 c. chopped jalapeños, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Soak dried peas overnight.
Drain, then cover with fresh water. Cook 35 to 49 minutes. Drain peas well. Cool.
Add peas to all other ingredients. Chill.
This will keep for weeks. Serve with Wheat Thins as a dip or as a salad.
