Tex-Mex Dip
Tex-Mex Dip is an moderately easy dinner. Made with 2 (16 oz.) cans refried beans, 1/2 to 1 c. salsa, 8 oz. container sour cream, 1/2 c. mayonnaise and 1 pkg. taco seasoning, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Combine refried beans with enough salsa to be spreadable, but not runny. Spread mixture on a large serving plate with a rim to contain the mix.
Combine the sour cream, mayonnaise and taco seasoning. Spread on top of the beans.
Peel, pit and purée avocados.
Season to taste with lemon juice, salt and pepper (or use prepared guacamole). Spread mixture on top of sour cream layer.
Sprinkle scallions, tomatoes, cheese, jalapeños and olives (if you like them!) on top of the guacamole.
Serve with lots of white corn tortilla chips!
