Tennessee Pumpkin Bread
Tennessee Pumpkin Bread is an impressive dinner. Made with 1 2/3 c. sifted all-purpose flour, 1/4 tsp. baking powder, 1 tsp. baking soda, 3/4 tsp. salt and 1/2 tsp. cinnamon, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Grease a regular loaf pan or 4 small mini pans.
Sift together flour, baking powder, soda, salt, cinnamon and nutmeg.
In a medium bowl cream shortening, sugar and vanilla.
Add eggs, one at a time, beating thoroughly after each addition.
Stir in pumpkin. Stir in dry ingredients in 4 additions alternately with water (3 additions) just until smooth.
Do not overbeat.
Fold in nuts. Turn batter into prepared pans.
Bake in a preheated 350Β° oven until cake tester comes out clean 45 to 55 minutes or 30 to 40 minutes.
Turn out on a wire rack, right side up.
Store, tightly covered.
