Tater Tot Casserole
Tater Tot Casserole is an moderately easy dinner. Made with 1 lb. ground beef, 1 medium onion, chopped, 1 can mexicorn, 1 (16 oz.) can mixed vegetables and 1 can cream of mushroom soup, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Ground beef and drain well.
Layer the beef in bottom of casserole
Sprinkle the chopped onions on top of beef.
Drain the Mexicorn and vegetables, reserving the liquids. Layer the Mexicorn on the top of the onions and the vegetables on top of the Mexicorn.
Pour about 1/4 cup of the reserved liquids on of the mixed vegetable layer.
Next, spread on the mushroom the top of the casserole with the Tater Tots.
Bake at 400Β° until bubbling.
