Tamales
Tamales is an impressive dinner. Made with 1/2 c onion, finely chopped, 2 cloves garlic, finely chopped or 1/2 tsp. garlic powder, 1 lb. lean ground beef, 1 tsp. chili powder and 1 tbsp. all purpose flour, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Brown onion and meat; add seasonings mixed with flour.
Add tomato paste and simmer about 30 minutes.
Cool and shape into tamales about 1 1/2 inches in diameter and 4 inches long.
Mix cornmeal, flour, chili powder and salt together.
Roll shaped tamales in dry mix.
Place each tamale rolled in dry mix on a coffee filter and roll up.
Place tamales in a heavy cooking pot and cover with equal parts of tomato juice and water.
Simmer very slowly for 2 to 3 hours.
Move tamales very gently occasionally to avoid sticking.
