Tamale Pie
Tamale Pie is an moderately easy dinner. Made with 2 c. cornmeal (stone ground, if available), 1 lb. lean ground beef or ground round, 1 small can tomatoes, 1 buffet size can ripe olives (pitted) and 2 onions, minced, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Add cornmeal while stirring to the boiling water.
Cook 20 minutes. Stir often to prevent lumping. Saute ground beef in 2 tablespoons oil (Mexican's would use lard). Add tomatoes, olives, onions and seasonings.
Put half the cornmeal in the bottom of a 2-quart buttered casserole.
Spread meat mixture on top.
Cover with the rest of the cornmeal mush.
Top with grated cheese. Bake at 350Β° for 30 minutes.
