Tamale Pie
Tamale Pie is an moderately easy dinner. Made with 1/2 tbsp. olive oil, 1 c. chopped onion, 1 c. bell pepper, 1 (10 oz.) pkg. frozen corn and 1 (19 oz.) can red kidney beans, drained, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Prepare Vegetable Filling.
In a large skillet, heat oil; add onion and green pepper.
Saute until onion is transparent.
Stir in corn, beans, tomatoes, vegetable juice cocktail, fresh cilantro (if desired), the chili powder, cumin and salt.
Cook over medium heat for 5 minutes.
Place filling in a 2-quart casserole dish. Excellent with Cornbread Topping.
